2 large carrots (about 2 cups grated) 14 oz canned beans or chickpeas (drained and rinsed) 1 onion 3/4 tsp dried rosemary 3/4 tsp dried thyme 1/2 tsp ground cumin 1/2 tsp curry powder 1 tsp salt 1/2 cup whole wheat flour or oat flour oil for cooking
Start by adding carrots to a bowl then add beans, finely chopped onion and all the herbs and spices. Mix with your hands, until the beans are crushed and all the ingredients are mixed. Add the flour and mix a little bit more. Heat up some oil on a pan. Form patties and cook on both sides until crispy. Serve on a sandwich, or with pasta, rice.
